    Recipes Thread

    I know we pretty much have a forum full of college students that subsist on the offerings of most Value Menu options, but I'm sure there are some folks that can cook a mean meal here.

    I thought it would be a good idea to get some ideas for future things to make. I for example rarely go out to eat and make whatever it is I want because my options are few and far between, and a long drive to go anywhere to eat anything I'd feel like paying someone else to make for me.

    Format should be in a manner that others can reproduce what you are sharing, ingredients list, types of tools/pans/stones, prep methods, cooking temperatures...

    So, what have you guys got? Family recipes, things you've made or good ol' standbys?


    (I'm likely asking too much and this will quickly turn into a "How to Order Hot Sauce Pizza" thread.)

        Simple Pork Roast

        I have recently gotten into using charcoal as opposed to just tossing things on a propane grill, and at random, I decided to try something different. I picked up a Pork Butt Roast-Bone In at about 4 lbs, and decided to see what I could come up with.

        I make my own rub out of whatever seasonings I have to complement the pork, and have been very happy, in fact, this is something I've grilled 7 times in the past 6 weeks, it's a weekly thing, and I have been using the meat for lots of different things like enchiladas, pulled pork sandwiches, & pizza toppings to name a few.

        Here is how I make it.

        1 3-5lbs Pork Butt Roast-Bone In (Actually comes from the shoulder area, it's not pig ass)

        Washed and rinsed from the liquids left after being packaged, and pat dried. I place it on a sheet of aluminum foil, and let it come to room temperature.

        Next, I mix up a dry rub.

        I use Onion Powder, Garlic Powder, Fresh Ground Pepper, Dill, Mustard Powder, Salt, and Chipotle Powder. (Making one today that I put the seasonings into bulk Brown Gravy Powder, will update with pictures later.)

        Cover the roast on all sides with the rub, and go heavy with it too.

        Next, I wrap the roast in foil, end over end, and then rolled, a few times, as you don't want the juices and fat to leak out leaving the meat dry. I likely use about a 1/4-1/3 roll on the whole thing. (I've been contemplating using those disposable aluminum things they sell at the store, but again, I use what I have on hand, and I haven't picked any of those up.)

        I let the meat come to room temp, and while that is going on, I get the charcoal ready. I put about 30 briquettes into the grill, and I light them with a propane ditch burner, which takes about 4 min. After giving the coals time to burn off to where there is no more direct flames, I move the coals to one side of the grill and then place the meatroll on the opposite side. Put the lid on, and do something else.



        I check it about every 35-45 min, and I flip it to make sure it's evenly heated/cooked. I have to add a handful or two of fresh charcoal to the pile throughout the cooking, and make sure to put the burning embers on top of the fresh stuff so it gets a chance to burn.

        After about 4-5 hours, and two or three additions to the coals, I let the temp come down in the grill on it's own, with the lid on to let the meat absorb the juices and fat. Once it's cool enough to pick up by hand, I cut the foil packet open and place the meat on a cutting board. At this point, the bone slides right out, and the roast can be pulled apart with a fork. I shred it up, and if I'm not eating it right away, I toss it in a 1gal ziploc and toss it in the fridge to use when making other items.

        It's a 4+ hour cook, but it's something not to rush, the end result is amazing.

        I'm gonna fire up the coals and put one on in just a few moments, so I'll come back and post some pictures.

            Two slices of bread
            2 spoons of nutella
            1 banana sliced

            Spread nutella on bread and add banana slices into sandwich.

                  jalapeño cheetoes + Grey County gravy sounds disgusting but is actually amazing!

                  Also use big peanut butter cookies for hamburger buns!
