Recently pulled a few heads, 2 were good and 1 was warped a little too much. One I am keeping for myself and this one is for sale.
Out of an 88 735i, it has been tanked and checked for straightness, probably as straight as it gets at 0.002 between center cylnders.
5.077 thick.
Factory specs from the shop manual for reference:
thickness 129mm +/- 0.1mm or 5.079 +/- 0.004
may not be reduced by more than 0.3 mm or 0.012".

Obviously it's a good idea to replace the valve seals while the head is out, so it's totally up to you, but makes sense to do that.
