Do the different colors of the coolant temp sensors make a difference? I have seen blue, brown, white and black. Are they interchangeable? Is there a difference between the one for the DME and the one for the temp gauge? The brown connector for my temp gauge has two female pins, but the sensor only has one pin. Is this correct? or should I swap to a two pin sensor? I have searched, but have found no confirming info regarding this. JLEVIE can you help?

are you talking about sensors in your thermostat housing? Do you have just 2 (you didn't say what m20 you got).
If your Tstat housing has just two sensors: one is brown - coolant temp sensor (one contact) It's for your temp gauge.
The other sensor is blue - it is a temp sensor that sends data to your ECU on your FI engine (two contacts).
Both sensors plug into your FI harness, Brow connector to brown sensor, blue to blue.
for the colors:
brown sensor p/n 12621710511 is always brown or black. I never seen it in any another colors.
Blue sensor p/n 13621357414 can come as pink, white, light blue...depending on the manufacturer.
Buy using the part number, not color
