Coolant Temp on Cluster not reading high enough, aftermarket hookup?

So ive been having issues with the coolant temp sensor flicking around even after tightening the ground nut, usually resolved with some taps on the cluster. Also been dealing with some intermittent overheating issues as the coolant temp would start to rise sometimes on the highway and while sitting still for too long.

last night it seemed temp was rising quicker than normal and the gauge was flipping back and forth between hot (~3/4) and normal (1/2) on the highway. after some more taps on the cluster it shot down to a little under half and stayed there and seems like maybe its broken.

last night i swapped to a different cluster and the cluster warms up find but then stops at the same point.

    so my question:

is it possible that something is now wrong that it wont read any higher? im worried its not accurate (as accurate as it couldve been) and risk not realizing when its running hot

second question: does anyone have a write up on how to install an aftermarket gauge? specifically looking for the best way to tap into the coolant to pull a reading
