Remove power to the ABS controller and presto, no ABS. I've driven my Spec E30 with and without ABS. I can manage threshold braking either way and w/o ABS I can go a tiny bit deeper into a braking zone. But the downside of that is that is way too easy to flat spot a tire w/o ABS. So I fixed the ABS.
The car makes it possible, but the driver makes it happen.

Yeah, don't discount ABS, even the shitty ABS. If you're ever going to be running your car in the wet, keep that shit. Just pull the fuse when you're not using it.
I don't miss ABS, I am not saying remove it if it's 100% working, but w/o it you'll learn to drive your car a little different and figure out in time just where the limit is w/o locking up your tires. Now for those times when you do need to make a panic stop, especially in wet, you'll probably be better off with abs unless you are very good with the brake pedal :)
I would never take the ABS off my track car. I'd rather lose the tenth of a second in the braking zone then a $200 tire. I don't know of any drivers I run with that are good enough to threshold brake perfectly every corner without lockup. I'm not racing for big $$$ so it's not worth it for me.
