The wheels are 16x8.5 et 32 and 16x9.5 et 38. Should I go with 18mm adapters all around, or 18mm F and 20mm R?

i'd do 18s up front and 25s in the back.

Looking at your sig, it looks like your gonna be tucking some in the back. It sure beats white. But then again, I think your car looks great just the way it is...even with the 14s.

EDIT: just out of curiocity since ive never noticed this til now, is that the correct direction of the wheels? or should they be the other way?

That is the correct direction. Both wheels pictured say "Install Right Side Only" on the inside

Rear: 20mm 4x100 (57.1) > 5x120.65 (70.3)

Wheel Specs:
