I think that's the only way this will sell. Otherwise you are waiting for the buyer that wants everything exactly as you've made it on your car...I haven't met any e30 owner that doesn't want their car to be unique to them and only them.

In the end the toughest part will be selling the car itself, however, as it's a slick top, some racer will snatch it up if priced accordingly.

Or I'm waiting for someone who's going to part this out themselves and make a good amount of money, while being able to decide to keep the really rare, really hard to find parts if they want.

Yeah I figured as much, there are few people who are willing to drop $3k+ on a car that they will part out though. Means you have to tie that money up while you sell the parts, it's more difficult than it seems on the surface.
