Your in Ca, this is the rule in CA. You need to have two rear view facing mirrors in your car. So your center rear view in the car, then your drivers mirror. That's two if you delete your passengers.

No, there is a reason YOU have three mirrors on YOUR car. There are a lot of small cars that do not have a passenger side mirror. Law requires only two, as Analandrew73 stated.
