Or can you cycle options on the device. Can I change the configuration myself?

Thank you for clearing up exactly WHAT they can do! Now I know I have to have one of these, period. Question, what needs to be done to make the gauge function with the readings I want? Is it something I can do or does it need to be set from the factory? If I am running the Innovate LC1, how will it hook up to this?

To hook up the LC-1 you just run the wideband output from it (brown wire) to the corresponding input on the terminal block, program the gauge 0V and 5V endpoints to match the LC-1 output and the gauge does the rest.

The displays on the gauges themselves are fixed, so what you see is what you get, but you can swap out the gauges for different ones that show different readings. You would require the appropriate sender to supply the new signal as well.
So for your particular setup lets says you were running the following:
left gauge: boost, AFR
right: oil temp, coolant temp
now you wanted to wanted to read voltage, you would do the following:
pull the gauge out
disconnect all the input wires
pop the back cover off
remove the oil temp, coolant temp module
install the voltmeter module
install back cover
connect all the input wires to the correct sensors
done!
now you have the following
left gauge: boost, AFR

I am still bot fully grasping it. If I want the gauges to give a different reading than the factory setting do I change out the physical gauge or is it programmed in somehow? If programmed to read differently, how is this done?Comment

A boost and AFR gauge combination will only ever show boost and AFR readings.
Just like a multi bit screwdriver, you change the bit to make it work with the screw.
I do not believe many people will take advantage of this modular design and having up to 4 readings should cover the needs of 95% of the users out there.
In my built Audi I ran boost & AFR, oil temp & oil pressure as those were the 4 items I was most interested in keeping an eye on and never changed them.
For the remaining 5% that have some crazy build, they will already know exactly what parameters they want, would know when they would need to change out displays and if they choose to use both air vents they could monitor up to 8 parameters at once.

For those of you interested in the Valentine 1 remote display function here is a video of how it works.
The PVG-e30 module would work exactly the same way except you use the remote switch to program and silence the unit
