Do you think this will work with my ls1 swapped e30? The oil pan is a bit bigger but it's in the same place as the original? How much space is there from were the steering rack starts to were the plate bends?

Sorry for the late response.
From the center of the steering rack bolt to the bend is about 11"
If you can measure from the steering rack mounting surface to the bottom of the pan I can let you know which skid plate would work best for you depending on how low your pan hangs.
