Any photos pre shoe polish? Is shoe polish transferrable?

Not if you put a sealer on it after you've applied it. I'm going to be doing the same thing to my seats.

Hate to Hijack, but a guy I work with re-dyed his Corvette seats from maroon leather to black, and he used a saddle dye you can get at any Cenex farm supply store - it was Feibing (sp?) brand and it was USMC black.
I asked him about how it held up, and he said there was zero color transfer to his clothes and it looked great 6 months after he did it. The prep was to lightly sand with fine sandpaper and wipe down with acetone, let it dry and then apply the dye, and buff with a rag when that dried. It took so well that you would never guess it was a maroon interior previously.

It's not how you handle the good times, but the faith you keep in the bad that defines you.

No photos pre-polish. I did the same thing with the seats in my E28 years ago and had no problems.
