Just got a Calypso cabrio in.
Only thing that would be of use is the hood and trunk.
Really clean. In fact, it might just get a new head (snapped a timing belt) and be re-sold.

What would be the going rate for a Z3 rack? I would make an offer, but I honestly don't know. A new one is out of the question, and although remans are more reasonable, everyone wants a core.

Half of new is a common rule of thumb.
FWIW, a Z3 rack is really aggressive for an e30.
Gets a little twitchy at high speeds. If its a track car and you are ever in a turn over 70MPH, I would do some research to see what other's think (if you haven't already). I don't like it. Shit can get out of hand quick.
