I've read that those ebay tops are not trustworthy and leak like hell after a bit. Is this not true?

Not a replacement top - an original with frame. Try searching for "e30 convert* frame" and see what comes up.

Not sure what you mean by "front seat mounts" and "bolster under steering wheel". If you want to fix your odometer gears, spring the money and buy them new (do a search and you'll find the site. odometergears.com, odometers.com, or some variation). If you buy used gears, they likely will break soon anyway.
