As the title states, birthday is approching and GF want to buy me a DSLR setup, good entry level that I can grow in to. Good condition with extras is a plus.

How elaborate? I got my Nikon Coolpix very cheap takes great photos. BUT is basically a point and shot due to no ability to swap out lenses.

Get a cheaper body used. I recommend a 40D or something similar for under 500. Spend the rest on quality lenses. I like the 40D + 17-70 2.8 combo.

if you ever want to shoot video, you have to step into 50D minimum or get a T2i, I heard that the video chip is the same as the 7D. but quality lens trump amazing body

get a t3i if you want cheap video. its basically the same sensor as the 7d and 60d..

if you dont really want video a 50d or a 40d would be really good with the sigma 17-70 lens... and those bodies are made of magnesium. so theyre pretty durable

Look into bridge cameras if you don't think you'll use all the settings/functions of a DSLR.
I'm getting a D5100 soon and I would definitely recommend it.
You should also go to a best buy or any other place that sells the cameras you're interested in and try them out. You can even pop in your own SD card and take pics with each camera, then compare them when you get home.

my tip if you are new to DSLR, get one that "new" it has stabilizer and place some money in lens(es) when you get more experience.
