Curious, why not use the stock fan switch and thermostat from the motor? I've been running my S52 with an m20 rad, no mechanical fan, stock e30 fan switch and running it through the original aux fan. This has worked for me through mid-summer autocross and track days with temps in the high 30's. The only change I did was making the fan switch output high speed signal at 91 degrees instead of 99 by changing the pins in the plug. I see you're in a hotter environment then mine but even still you should be fine with nothing more than an e-fan upgrade. Hell if you can afford it spring for a mishimoto rad and you'll be solid.
Is it a track car you're building? If it's a street car run the stock thermostat setup or you'll overcool the motor on days that are not as hot.

I have an e36 fan switch (sensor in the rad) in my m20 (mishimoto) rad and the fan kicks in right at teh halfway mark and turns off by 3.8ths. It usually never has to turn on except for warm days when I'm beating on the car. The aluminum rad does a good enough job as it is.

I live in Puerto Rico, weather is very humid and 365 days of 90+ degrees weather and traffic is heavy. I only used my car on weekends and track days. The tracks during the day get temps of 100+.
