To take the wheel off do I pop the roundel off or the horn cover? just don't want to break something

the whole horn cover comes off. incidentally, the roundel does come out too, but you'll want to pull the cover off to take the wheel off.

might I ask how does one remove the horn cover?

You just pull on it, straight toward yourself or...?

edit: just found my answer in another thread. Seems that you just pull it off.

Use a small screwdriver and pop off the roundel cover. under that is a nut, crack that, then turn your key to unlock your steering wheel and done. Pops right off.
