Leather conditioning on the back of the fabric.

In the past when I've owned cars with leather I've noticed that when i can access the back of the leather surface to apply conditioner it is soaked up better and does a better job softening the leather and making it more pliable. The new seats i have for my convertible are still in great shape but you can see the beginning of the contraction in the top of the rear seats where they get the most direct sunlight.

Is it worth the work to remove the leather from the seat so that a thorough application of conditioner can be performed on the back of the leather, where it seems to soak up more readily?

Probably worth it, you'll just need some hog ring pliers and automotive quality hog rings. You can find them on ebay.

    Is the stitching still intact?

Yup, stitching is great. The leather is visible shrinking and straining the stitching but its holding.
