LED's will dim to a point, but you usually use pulse width modulation to dim them (turning them on and off really fast). For example though, I put LED's in the cluster in my Jetta and the stock dimmer was able to dim them a bit. Same with a set of LED tail lights I made. I used a potentiometer to dim the LED's for use as tail lights (as apposed to brake lights).

So in short, it might work.
