Head gasket...standard or oversized which to use.

My head has been milled a bit during a valve job. How do I determine whether I am ready to use an over-sized head gasket. Does anyone have the measurement of the heads thickness, I assume from the valve cover surface to the engine surface, and the number when indicated that would call for the over-sized gasket.
