I just picked up two e30's. One was being driven on the freeway and ran out of oil and seized up. The 2nd got a ripped off oil pan- along with other things- and ran for about 20 sec (gently) until it was shut off. What do you guys think happened in the number one engine and two, what would go first in the number two engine? think the head is fine? I need to make one complete running motor.

In the case of the first engine, at the least the bottom end is gone and at the worst the block is beyond salvage. The head on that engine probably has burned camshaft bearings and is likely just a paper weight now. Unless you want to spend an inordinate amount of money that engine is probably just scarp yard fodder. But to be sure you'll have to tear it down and have a look.
In the case of the second engine if it truly was shut off within 20 seconds of the loss of oil and the engine speed wasn't near the top it is probably okay. When i hit my pan i just backed of of the curb that i was on and shut it down. but i didn't even get a oil pressure light go on. 20 seconds isnt that long.

I would more than definately shoot for the second one. If they were being truthful about it only running for 20 seconds after the break then the motor more than likely had enough oil residue coating most everyting.
Here's a story that will make you feel better about takin the second motor and just slapping on a pan. My buddy, whos isnt very car oriented, had not checked his oil for some time. He owns a 2002 celica which has the 1zz-fed motor in it which is notorious for consuming about a 1/2 quart of oil every 1000-1500 miles once they hit about 60k on the motor and he hadnt done an oil change in a while. He came to my shop on a Friday to show me this new part he purchased and everything was gravy. He left and ran some errands then went back home. He drove to work that night and came back then on Saturday he came back to my work where I was workin on teh e30 and his motor was making a clicking sound similar to our valve knock when they are out of adjustment. I told him to pop the hood so I could check the oil. ZERO OIL WAS ON THE DIP STICK. By that time I was thinking what an idiot and I asked him when was the last time he checked his oil and he said he didnt know. So we put a full quart in, nothing on the dip stick. Second quart, nothing. Third quart we finally see some on the stick. and finally the last quart and a quarter to top it of. He was down 4.25 quarts on a small 1.8l 4cyl and I checked his manual and it says it takes about 4.5 quarts WITH FILTER. He had been driving for god knows how long with next to no oil in his motor.
I know the M20 and the 1zz-fed are two completely different motors, but this just shows you how long a motor can actaully go just relying on the oil pump before destruction happens. Apparently the damage was already done and the valve knock I thought I heard eventually turned into a louder knock. He snapped a rod.

and the lighter weight rods on the fed probably get a little more torque and power up top
