My 325e started this weird idle yesterday,it'll be at 1k rpm then jump to 1.5k rpm,I also took out my thermostat,Im guessing its a MAF sensor issue?anyways any guesses what's the going on?

The most likely cause is intake leaks. A search would have revealed that.
Find a shop that can run a smoke test on intake and fix the leaks it reveals. And remove an clean the ICV with carb cleaner until the vane moves freely. Replace the O2 sensor if it is of unknown age or has 100k on it. Other causes are possible, but until those are dealt with there is no point in considering the alternatives.
Put a thermostat back in. The cooling system need that to operate properly.The car makes it possible, but the driver makes it happen.
