helping decidng on what range of vdo oil pressure and temperature

oil temp
since the only practical range is 120-300 in the oil temp range from vdo vision and cockpit series
could i use a water temp gauge 100-250 I feel like i would use that range more

Since I'll bet you won't even see 60psi on a cold engine a 0-80psi gauge should be fine. It really won't matter what oil temperature gauge you use as an M20B25 engine doesn't have oil temperature problems.
