can you "slap" an eta head on a b25 block? obviously power loss and such.... but maybe good mpg gains...pretty sure pistons would say hello to the valves... probably wouldnt do it but im a curious fella

You could put an eta head on an M20B25 engine. But there will be a serious loss of power and unless you set a lower rev limit there is the risk of valves hitting the pistons (the eta head doesn't have dual valve springs). And you'd need to tune the DME to match the flow characteristics of the head.
If the goal is better mileage, swap to an M20B25 or an M42 engine. The car makes it possible, but the driver makes it happen.

i hope using an eta head is a joke too. i doubt you would get an increase in mpg. the loss of power would take away from that. as you would need to work the motor harder to get around. you forget the eta's have a much higher torque figure due to the stroke. which is the main driving force. the eta head on a b25 isnt going to give any more torque. and i doubt it will change compression any. so your in a lose lose with the eta head. they are even rubbish on the b20's they were designed purely for the b27s 4500 rev limit.
