Car running 3000rpm at 70mph..is that normal?

Was running if its normal for an auto to hit 3000rpm at 70mph?

Also, coolant light lites up even tho the reservoir tank is full. Bad sensor?

that normal is you have a 4.10 diff, which you probably do

and yea, sounds like a bad level switch

The 4HP22 has a 0.73 4th gear, while the Getrag 260 has a 0.8 5th gear, so they run at essentially the same rpm in their top gear with a 4.10 and 3.73, respectively
