can you destroy a waterpump by running low on coolant for an extended period of time?

Only if it's pretty much totally empty on coolant. The antifreeze has a pinch of silicon in it that helps to lube the shaft.

But with the coolant so low that the water pump isnt even slightly submerged there is basicly no coolant in the system, certainly not a drop in the head.

You would warp the head and crack the block long before the water pump packed up and went home.

              Yea.

Incedentally, this is also why you shouldn't run straight water in the cooling system.
