I think the top one may connect to the coolant level senor
I also think that the bottom picture posted is for the door gong
are you having electrical issues? If not don't worry about it, in general bmw kept the same wiring harness throughout all the e30s so you will find tons of connectors disconnected and if you really want to know get a wiring diagram and you will soon find out that each wire is color coded and identifiable(takes a while to get the hang of it)
1) My coolant level sensor is a straight connector - not angled like the picture. Could it be something related to the 13 button OBC system - exterior temperature sensor or alarm horn perhaps?
2) No idea on that one, but my cars have that same connector hanging around unused. I think it may have been used by BMW to hook up a trickle charger when the vehicles were being transported / stored when new.
3) definitely door gong.
