ive just been toying with the idea of different motor configs, im sure its all been done. What would a M20B25 + eta crank equate to? How about eta pistons and crank in a M20B25 engine? Im just thinking of small things to do, without having to really mess with a different ECU, fuel management, ect.

Dude, seriously, go look up "stroker", it's been beaten to death. Go look up Fred Kim's "Strictly eta" site, as well as others, as the topic of e30 strokers has been rehashed to infinity.
Building a motor is a lot more than a bolt on job, and is going to require ecu tuning to make it run anywhere near resembling decent.
