I'm getting ready to order new wheels, what would be the proper offset for 15x8 wheels using a 225/50/15 tire, on an e30.

Wow, you might have some rubbing issues with that small of a diameter wheel. I'd say you'd have to roll the fenders and maybe run around a 15 mm offset to clear the strut.
with a 225/50-15, you are going to be stretching that thing to fit on a 8" wide rim, but that's not your question
Proper offset (though fender lips would still probably need to be rolled in the front) would be 17, I'm thinking. That should give you some extra space to clear the strut. It will still be close, however, no doubt about it.

A 225-50-15 fits fine on an 8" wheel. It's listed for that size and is a common application.
To get the maximum usage out of a 225 tire an 8 inch rim works best. Looking at other rims like the ronal LS 15x7.5, it uses a 25mm offset and 225 tires fit perfect on the e30.

I know this, I was just stating that another size (with a measured rim width of 8") would be better than one with a measured width of 7".
That's all. I guess nobody makes a 235/50-15 though.
I essentially have an et22 15x7 rim with a 225/50 tire on it. Now, take that wheel and make it 8" wide. You're essentially adding a half inch to either side of the offset (mounting surface) with the tire staying in the same place. I can probably fit about a pencil between the tire and the strut, little moreso between the wheel and the strut. This leads me to say that you should be safe with something like et20-25 (I'd stay closer to 20).
