215-40/17 is the normal size you;ll want, but depending on the offset and your suspension, you may be able to go wider without rubbing

Depends on what wheel you get. Some sets were staggered, other sets were the same width all the way around. I believe it was 7.5 and 8 or 8.5" widths, though.

          E36 M3 staggered wheels were 7.5 and 8.5 with 225/45 and 245/40 tires.

As far as tires for a 17x7.5, the norm is 215/40 and it's a good match with a good selection. I happen to like oversized tires, but it's only possible to run them with rolled fenders, a very stiff suspension, and offset cab bushings for the front to move the wheel a little forward. You could also run 215/45 tire or 235/40.

Another option is 225/40 but the only tire available in that size is a Nitto NT555. You're probably better off just going with 215/40, you'll be happy.

I'm running 225/45/17s on my Kosei's with 30mm offset without rubbing or rolling fenders, in front and rear.
