all e30's from 84-86 should have the 2 peices nose panel/valance.

ALL laters it is one part, tack welded, glued, and painted together.

later 86's are one piece, at least mine is (if its original)

As for the ac my shop claims I must replace the compressor to run 134a, which is contrary to almost everything I have read online.

i think they really mean "get rid of every bit of r12 residual you can. flip it over, turn it a little every 15 minutes for about 2 days until it is empty" i dunno thats what my shop told me they wanted me to do. i think its because the shop's 134 doesn't like trace amounts of 12 at all.
