It seems as though with a little searching, I was able to find the center bore of e30 m3 wheels to be 72.6mm in diameter.

That's correct, E30 M3 is 72.6mm. Also, E39 is 74.1mm, so for anyone out there wishing to run E39 style 5's you will need a hubcentric ring.
