Need advice for caliper / rotor replacement

I'm getting my 1987 325is back up and running after sitting for a few years in the south.
Turns out the brakes are rusted together. Mechanic friend suggests getting all new calipers, rotors and pads.

I checked and have ATE on the front calipers.

There seems to be a a lot of options out there, and i'm struggling figuring out what is a good replacement that isn't $800 a wheel.
I've seen reman ones, and there are options to send mine out to be refurbished, but I'd rather order a set and install them.

Am I overthinking it? or is it actually complicated to not get a set that is super expensive?
(this is not a daily driver, but an occasional driver, and occasional HPDE car)

    Thanks!

Why not try a set of new dynamic friction calipers? They're at least on rockauto for 58 per side, and you can swap in a set of Girlings without issue since those units come with the mount brackets.

Get new soft lines while you are at it.

You should be in for under $500 for everything unless you want track focused pads.
