I say just go 215. I'm running 215/35 on my 18x9 ET22s, it's a lot more grip than one would expect.

I know you've already done a little fenderwell massage to get those 215/50/16s on, so I say go for the 225/50. It's way too big, but you're already comfortable with beating in stuff.

I have Bilsteins and H&R springs. 87 325is.
I wanted a 16x8. but I'm thinking I can deal with a 7. Purely cosmetic, not for performance.
