Get your hands on one of the old M10 based engines that the BMW F1 team used. That would be an insane swap.

On the old school fun factor,
Stroker M20 + dbilas would be a hoot. (you are welcome to drive mine sans ITB dbilas setup if you want.
M30B35 + heavily modified S38 throttles (or dbilas)
Euro S50B32 / S54B32.. these are more technology versus old school though.
Stroker M20's are my vote though if you love the old school option
