I'm running Eibach springs with Bilstein sport shocks and a Suspension Techniques swaybar kit and find it a bit soft, frankly. I probably have similar desires to what you do in terms of car feel and I'm planning on upgrading to IE3s this spring. I also have solid subframe bushings and M3 offset CABs from Turner Motorsport which make a huge difference in the precision with which the car handles. I'd just like it a little flatter through the corners so I think some IE3s should bring it up to where I want it.
As far as brakes go, keep it stock. Good pads, new blank rotors (drilled rotors can crack if you're not careful,) and some good fluid should bring you up to where you want to be. I've heard that you can also upgrade the master cylinder for a little stiffer pedal so I'm thinking about going this route also but you'd be surprised what the OEM brakes (when in good shape) can do.
Overall I'd say go with a reasonably stiff spring and shock and then consider upgrading your bushings too, although that will sacrifice a lot of daily ride comfort.

With the 25mm master cylinder, a set of SS braided lines, some good fluid, and some good pads, you will be more than happy. That is exactly what I did and I love the ~1.5" of pedal travel that I have.My 2.9L Build!
