Yan if you can get the really low offset ones I would say jump all over it. Those have a massive dish and blows away the euro basketweaves in look. If you are talking about the 25mm offset ones then they are still cool but dont stand out as much.
are you saying there's 3 styles of the 15" LS? as far as i know the et25 has the deeper lip and the et29 has the smaller one. i have the et25's and the dish is pretty deep, much deeper than the pics people have been posting recently

i don't know about you but it makes since to me that the wheel with the larger offset would have the deeper dish...am i thinking clearly here or no?

No you are not because it's negative not positive offset and the more of it there is the further in towards the center of the car the tire sits. Less offset means more dish. ET25 is what the car should have and AFAIK the LS is deep dish.

my bad, i thought more offset would put the lug bolts closer into the fender and not the tire. So rims offset is refering to where the tire lies not the lug bolts?

No you sorta have it right, it's lug nots or tires depending on how you look at it. Thing is almost all cars have NEG offset so it's not mentioned as negative but it's assumed. If it were positive offset you would have it straight.

Offset for e30 is in millimeters the distance between the center plane of the wheel which is equidistant from both rim edges, to the inside edge of the mounting surface, where the wheel touches the brake rotor. As this number increases the wheel sits farther in the and the wheelbase width decreases.
