they recommend the blue coolant because (as several people have already mentioned) it won't eat up your seals, hoses, gaskets, and other important plastic parts in your cooling system. although this was a big deal several years ago, it doesn't make a difference with most modern coolants.

Green is in the car right now (previous owner) but I have BMW ready to go, just been lazy.

I thought as long as its phosphate free it was ok.

You generally want to run watter wetter or another corrosion resistor in straight water. Most track cars run straight water with water wetter/corrosion protection in case of a leak.

Track and street conditions are very different.

A million years ago when I raced Datsun 510s (True...I worked for BMW and raced against them in the 80's) we used a mixture of watter and ethyl alcohol. We always drained it out at the end of the day and we never expected anything to last more than several races.

Coolant/Antifreeze is necessary on the street for corrosion, lubrication and boil over protection.

Running straight water will wear out your water pump bearings as they don't provide lubrication to them the way that running a mix of coolant and water does.

i just use water cuz when i race because i don't want to have to clean up the green or blue mess that will pontentially get me booted out of the race in the misfortunate event that i bust a hole on a radiator pipe or what not, but i live in cali, so the weather is different, i guess...

how bad is it to do that...?

Eats the tank seals in the heater core, radiator, heater control valve....
