EAK!!!!
Sooo much info and not enough time to read it all.
First off i am a Porsche mechanic and have been for the past two years. The place i work for is poudre sports car here in colorado ( www.poudresportscar.com ). We have built many engines and two of the most powerful CIS 930 turbos in the country.
Cooling for the 911 comes from oil and air. The air cooled 911s hold with a filter change exactly 11q of oil. Any more it will cause the oil filter to explode and cause a mess over the engine. The cars do not get hot after sitting for a while. There are many reasons why some people claim there buddys car does etc. Could be due to a dirty engine, dog food on top of the engine cover preventing air flow (have seen this MANY times from mice) etc. A car that is properly taken care of will not do that. I will give you this that the 964 models besides everything else on them being crap will over heat because of shielding on the underside of the engine pay. At work we have soooo many of the undertrays that we have taken off of cars to sold the problem. That is a very typical 964 problem.
959 was not mass produced!!
2.7 motors are junk. They have been hammerd and abused to death. There is nothing good about them. One of the worst motors porsche has ever built. If you want a 2.7 take a 2.4 case and built it. Pretty easy to do and you will get about 210hp or more.
Headstuds are headstuds. You won't all of a sudden loose compression over a headstud. The cars that have been known with headstud problems are the 84-89 carreras. They also have bad valve guides. After 25+ years on the engines come on, Give it a brake. Look at 25 year old bmw engines or the cars  The problem with the chain tensioners is that alot of the motors have not been upgraded with the later carrera chain tensioners. They provide oil to the tensioner directly and is a MUST upgrade for any 911 that does not have them.
Best porsche 911 ever would be the 78-83 SC. The 993s will play there role in time but for now the SCs are the best.
Pssst little secret here (I and most good porsche mechanics can drop a 911 motor in 45min)
