OP: Your car looks incredible. You can't even tell it's HDR it's so subtle, but that's what makes it look so good.

Like what? In my experience the purpose of a rolling shot is to imply motion. The only way to achieve that is to use a slow shutter speed in order to blur the wheels/road/background.

You can use a fast shutter speed and pan with the car to freeze the car and blur the background, or use a fast shutter to freeze it.
