I am not going to lie- unless you want to invest cubic dollars that one is going to be hard to restore. Top is probably bad, the rear quarter needs work, and the door & fender (both convertible-specific parts) need work. All are repairable but it will cost you. The taillight area needs special attention to avoid leaks at the taillight gasket.
I say this having spent WAY too much going through similar work on my '89 convertible that had a mismatched door and fender and needed rear quarter work, on top of a new top.

the top is in great shape, seats are great, rear seat has no separation, crack free dash.
ive located a vert fender (local)
im trying to get a quote on the body work now. (this will determine whether or not i fix or part)
the door is an easy fix so is the rear quarter.
the rust thats visible isnt too bad (once the paint is stripped itll be more apparent how bad it is.)
if a build happens it will go as follows:
m30 swap
5 lug swap with 16' style 5's
metal euro bumpers
everything clean and oem
a simple tasteful build very a la' Hammertime. (someone que him in here)

I always prefer fixing up to parting out but sometimes a car is too far gone and I did not want to have you proceed without all of the data. It seems like you have a good handle on things so I'll be following along.
In my case I was too deeply invested before I realized that it was a bad idea to restore mine. I was past he point of no return and have thrown good money after bad.
