That's because you're probably eating tons more carbs than you usually do. That's the biggest problem with the vegan diet. You're substituting loads of carbs for lean animal protein. The total number of calories you take in often shoots through the roof. (Ever notice how many vegans are fatsos? If eating carbs all day is so good for you, then how come they're not all as skinny as a rail?)
