It simulates lateral g's that you would normal feel when driving a real car. Since it can't accelerate side to side and front to back continuously, (read: it can't drive around your house) it uses gravity to simulate this feeling. Since you are looking at a screen and are focused on it, you don't notice how much you are actually moving, just the force brought on by it. That's how rides like Star Tours at Disney Land or Soaring Over California at California Adventure work. Flight sims and other driving sims work the same way of course.
