    BBQ ribs for the first time

    As the title states any suggestions or recepies to make them a success. I am a complete bbq novice so help is needed. I have a weber spirit three burner gas grill I will be cooking them on...... I figure gas would be better for me to learn on, then graduate to coal.

          I can't believe it. Ribs are the shit.

          Boil for tenderness
          Always use charcoal, always
          Don't skimp on sauce, spend a few extra bucks
          Cook slowly, don't lift the lid a 1000 times.
          Babybacks>Beef ribs>Pork spare ribs

          If you reaaaally want to get into it, learn how to cook using indirect heat. Takes hours to cook, but you get a full bodied flavor, and unbelievably tender.

            Beef or pork?

            For beef, dry rub 24 hours before and let rest in the fridge.

            Place covered in aluminum foil in the oven set at 210° for 6 hours, then transfer to the grill with apple wood chunks for smoking at a low temp around 200° for another hour.

            Then add BBQ SAUCE 5 min before you serve them.

                  If you thought ribs were good, try grilled pork knee/shank.
                  Not very well known in the US, it's probably the best pork I've eaten.

                  Never tried making it myself, I usually go out to places that specialize in making them.

                    little box full of damp apple wood, hickory or maple chips. = way better ribs if you dont have a smoker

                      if you want to keep it simple. oil, salt and pepper. put on charcoal grill, sear one side, turn over, and keep the lid on till done. Then use your favorite sauce.

                        Thanks for all the great advice.... Everything I read says not to boil them,, if you cook them long and slow they will come out tender,, in theory anyway. So I cut them STL style did a very light mustard coating (ala the Alton Brown method) and then put on the dry rub . They are sitting in the fridge now soaking up all the great flavours. Tomorrow I will grill them on indirect heat and do my bestnot to screw up. I love ribs, just always been scared to try them. I will let you guys know how they turn out.

                        For sauce I am trying Sticky fingers carolina classic. It looks tasty.

                          If you have to boil ribs to get them tender, I'd suggest learning how to cook ribs...

                          Sounds like you have a solid plan, I ended up getting a cheap smoker from Lowes years ago when I was getting big into bbq and now that is where all my ribs end up.
