I think I will be stuck in a hotel in NY for thanks giving job wont be quite over by then. Oh well if at home a deep fried turkey is the only way, along with a couple of my home made apple pies and all the other stuff the G/F makes.

If you are going to roast/bake the turkey soak it in brine overnight

                1 cup kosher salt
                1/2 cup light brown sugar
                1 gallon vegetable stock
                1 tablespoon black peppercorns
                1/2 tablespoon allspice berries
boil that stuff together then put in a 5 gallon bucket with a gallon of iced water and soak the turkey overnight ass end up.

then stuff it with this stuff; combine them all and microwave for a few minutes till it softens and starts to release their aroma
                1 red apple, sliced
                1/2 onion, sliced
                1 cinnamon stick
                1 cup water
                4 sprigs rosemary
                6 leaves sage
                1/2 orange sliced

butter or canola oil all over the turkey and bake. It will be moist because its been soaking in the brine. Oh yea you want to rinse off the turkey when you take it outta the brine and then put the herbs in, pat dry before adding the butter or oil. put some butter under the skin for crispy skin, but you will have to cook it covered so it doesn't burn and cook uncovered to brown the last half hour or so

Soaking a meat (any meat) in any sort of salty solution leads to dehydration. Thats why marinades are very low in sodium.

I go real simple with my stuff. I get just butter, a can or two of chicken broth to start, and some turkey rub (lawrys), for my turkey. Its simple and good.

Mashed potatoes, I like the dehydrated ones from Costco. For some reason I absolutely hate fresh homemade mashed potatoes. No matter how good they are, theyre never as good as packaged. Weird, Im sure.

For gravy, I just make sure I use a lot of that turkey rub on the turkey, and mix that with some flour, and salt & pepper.

My girlfriend makes this half pumpkin, half cheesecake, on a home made oreo crust. She knows i hate graham crackers, so its what I get. It weighs like 15 lbs, its super rich, super fatty, but incredibly good.

Every year, I make these carrots. Theyre just real real thin sliced carrots, theyre in butter, a tiny bit of flour, and chives. Theyre not good, I dont like them, everyone else
does, though. But my little german grandma used to make them every year, and its just tradition.

I dont veer from the traditional on my Thanksgiving dinner. It all turns out good for me. But Im a boring person when it comes to food I eat.

Yes, e34john knows his birds. Brine is key. Also, do not go apeshit and buy a turkey that would make Kim Kardashian's ass look small. Roast it hard and fast, sort of like when I visited the HC to roast blunt's balloon knot sans Astroglide.

For mashed potatoes, use the right kind of potato. Mealy, usually marked as baking potatoes.

However, nothing sastifies me more than a plateful of roasted new potatoes, though. You'll want to use waxy (usually thin skinned) potatoes.

Wrong. Initially the solution is hypertonic. Water flows out and dissolved salt ions flow in.

If nothing else happened, you'd have a dry piece of meat.

However, the salt affects the cell chemistry such that the concentration of salts and ions changes. The net result is now that the solution is hypotonic and to maintain equilibrium water flows in.

Result: tender, seasoned meat. Not dry meat.

Make a roux with butter and drippings, then slowly add in chicken stock.

The basis of the holiday is bullshit, but I celebrate because it makes my family happy. I am responsible for making the pumpkin pie and my sister and I clean up.
