I did some work on my gf's car, replace motor mount, serp. belt, and the battery leads (time consuming on this car). Anyway I am done with work, car runs better of course. Of course I said I would just do the work for her.

Today I find out that she needed the car for a date tonight? is it fair that I charge her for the work since we are done of course?

If you two didn't agree on some kind of payment prior to you doing the work then it is your word versus hers. Obviously the only way you would be able to get any money out of her if she turns negligent is a subpoena. Sounds like she worked her magic on you, man up and deal with it; you got served.
