For simplicity's sake, I would swap the 2.5 in, rebuilt of course.
If you want something different, build the stroker 2.7.
I love my 2.7i, and my highest recorded gas mileage was 31, driving to the e30 picnic this year. But other than freeway, it gets around 25-27 which is pretty good if you ask me. Do note that I have an 2.93 lsd still in the back.
Of course my opinion is biased, but my car was able to keep up very well with a friends s50'd late model. My butt dyno didn't notice the increase in power from stock to stroker, but i think that proves otherwise.
Mate the 2.7i with a 3.73 or 3.46lsd and you'll have a blast of a little car.
