So, as I'm coming along in my swap, I've run into the dreaded (for me at least) wiring portion. My question is, how does one go about connecting power to the ECU? I'm sure it's really simple, but I can't figure out how to go about fusing it. Do I need to somehow wire in a set of relays to control the power? It sounds really dumb, but I'd appreciate the help.

You'll just be connecting the factory m62 harness DME power wire directly to the e30 fused battery wire on the firewall. Right above the large e30 battery cable junction on the passenger side firewall is a small power wire that also comes from the battery, which is fused (in the trunk). You're going to get your +12v for the DME there, just as the factory e30 DME did.
