If I wanted to get these powder-coated I would need to disassemble the entire thing right? How much clearance do I need from my stock setup to get an idea if they fit.

To get powder coated, yes you will have to dissassemble them. A good shop should be able to do that for you, I have been quoted 120$ at my local Nismo shop, to dissassemble/reasemble, and powder coat.

As for your clearance, what matters is the distance your spokes are from the calipers.
