What protection if any do these offer for the oil pan? What modifications would we have to make to accommodate something like this (https://catuned.com/catuned-skid-plate-armor-e30) for extra protection.

Couple of questions - will this fit an M30 swapped E30? M3 offset CAB ok?

Lastly, I usually jack my car up from the front subframe. Obviously this covers that area up... would it be safe to to use a floor jack on the cross bracing at the subframe, or not a good idea?

With our M30 mounts yes. We have not checked on other more mounts. Clears m3 offset cab no problem.

Jacking up by the x brace is not a good idea unfortunately.

Do you have to align the front after installing this due to taking off the FCAB?

You don’t have to take the CAB off, you just remove the bolts to be able to bolt up the x brace. The CAB should stay in place unless you manually push it off the control arm/frame.
