Are there any things that I need to get welded or plugged up when I remove the secondary air system? Who has some really good tunes for these?
What is the benefit of deleting the rear o2 sensors and the ews? I've heard mixed opinions on whether or not to keep the ews for tuning purposes.

the sole function of ews is that it is a complicated switch that keeps your car from getting stolen. it really doesn't have anything to do with the engine tune. the o2 sensors are another story. when we swap later model engines into e30's, it is common to delete various components because of cost and simplicity. it may or may not be a good idea, but it is often done because it saves time and money and complexity.

Is deleting the o2 sensors just cutting them out of the wiring harness? or is it done when you have the car tuned or something? And isnt it bettter to run more o2 sensors because you will have more control/info on what mixture is running through your car?

the after cat O2 is for emissions only, it doesn't affect performance. Also if you are converting to ODB1, it's not used at all.
